The ovens are lit at four.

Before the first espresso, Marta is already at the bench. Our lievito madre is older than the restaurant: she carried it over in a jar from her aunt's forno and still feeds it twice a day.

Everything on the counter is baked here, in two runs: cornetti and loaves at dawn, focaccia and pizza bianca before lunch. What's left at six goes home with the staff.

Six days a week.
Mondays the dough rests.

The bakery counter opens 30 minutes before the dining room.

The pappardelle alone are worth crossing town for. Stay for the tiramisù and the second bottle.
